Baked Green Potatoes

I decided on a baked potato for dinner tonight.

So...I baked it, cut it open, did the squeezy thing and fluffed it up.  And this is what I got:


Does anyone know why potatoes turn green?  I've always wondered...

I thought I'd try to cover it up with some butter, cheese, ranch dressing and Mrs. Dash (oh yeah...you know it!).

Eh...

Good enough.
